Loanne's Spicy
Fried Rice

3-4 tablespoons of
Jerks of the Caribbean
Papa Doc Pork Jerk
1 cup of white rice
3 tablespoons butter
2 medium eggs
1/3 pound grilled
chicken or pork

Prepare rice
according to package
directions and set
aside. Melt butter and
slowly stir in rub. Add
chopped fried eggs
and cooked chicken or
pork. Stir in cold
cooked rice and adjust
to taste.

Mojo Marinade

5 tablespoons of
Kevin's Peppercorny
2 pounds pork loin
1 cup orange juice
4-6 large limes
1 lemon
2-3 medium onions
6-8 whole garlic cloves

1 tablespoon salt

Squeeze juice from
limes and lemon.
Thickly chop onions.
Combine above
ingredients in large
bowl, mix thoroughly.
Marinate pork lion in
mojo for 1-2 days.

Place pork and mojo
in shallow baking pan.
 Slow roast in oven for
3 hours at 375
degrees.

Party Mix

6 tablespoons of
Blackbeard Beef Jerk
or
Scarborough Chicken
I cup roasted peanuts
1 cup rice Chex cereal
1 cup corn Chex cereal
1 cup thin pretzels sticks
1 cup Cheese-Its
1 cup salad croutons
4 cups popped popcorn
3 tablespoons butter

Melt butter then let cool
slightly. Pop popcorn.
Toss above ingredients
in bowl of shake it up in
bag.

Serves a whole posse of
hungry party goers.

Thai Turkey Larb  
Lettuce Wraps

4 tablespoons of
Rub Rub Me Do
1 pound ground turkey

3 large fresh limes
1 can beef broth
1 tablespoon chili
powder
2 minced or chopped
garlic cloves
1 sliced jalepeno
pepper
1 bunch mint leaves
1 chopped onion

Brown turkey and
drain excess fat.  Add
broth and slowly
simmer until broth is
reduced. Take off
heat and mix lime
juice, garlic, chili
powder, jalepenos,
and finely chopped
mint leaves.  Spoon
into lettuce leaf cups.
